Najat,

I was trying to see whether I could get a sneak preview of the book online last week but was unsuccessful. Your review is very timely! Must get my hands on this book. Just wondering - the 3 day cake decorating rule - by the time the cake is delivered - would its freshness not be compromised?

Freshness is not compromised if you follow the basic hygiene guidelines for cakes ie ALWAYS COVER your cakes.
After baking and once cooled, wrap your cake with cling film many times and cover with aluminium foil. Keep the cake in the fridge if you wish but you need to bring it to room temperature before decorating it.
Once ganached keep the cake in a box until you put the fondant on.
And fondant will protect the cake further.

3 days is what Planet Cake does but you should plan yours to suit your time and schedule. It may just be 1.5 days ...

Thank you so much Najat. This confirms that I have been doing it the right way. If they are not in the fridge wrapped up proplery, they are sitting in an airtight container. I even put them in the airtight container when defrosting - I am obsessive about freshness!

It's a good idea to put anything you're defrosting in an airtight container anyway to prevent condensation from getting on your cakes and icing. With our humidity, the minute anything comes out of the fridge or freezer, it's all moist (not in a good way) on the outside

Hi Najat,
"Prettywomen" was given to my colleague n myself when we were working. And have been using this nickname for sometime. So forget to change the "men" to "man" . Smile So its "ME" only now....... Razz

Anyway, re the book, I think I can get a few copies to be brought back from Melbourne if any of you want one. But can't get too many copies cos I'm asking my daughter's ex-classmates to bring back KL. Dun know if she still have space since I heard she did a lot of shopping. Am asking my daughter to check out the price at Borders (I dun remember how much I paid for my copy). Any interested, plse pm
me. She will be leaving back to KL this Friday..
