Hi

I've bought the Vegan Cupcakes from Kinokuniya at RM72 (including delivery). May I know what type of soy milk do you use? Can it be any brand or do you have any specific brand that good for baking?

Its a matter of taste as different brand will have different taste and some had grittiness of the soya husk in the milk.
I cannot remember what brand I usually buy since it depends on the stock on the shelves and I buy in bulk so I forget the brand once I have them at home ( ) and I know I don't particularly like Yeo's as i can taste the husk.

I do not use fresh soya milk in the cakes either as shelf life is only 1 or 2 days. Fresh ones are more for daily consumption.

Thanks Kak Najat. This was my 1st try for vegan cupcakes. I actually got a request for Indian Weddings. So, I need to try the recipe before selling it to others

Hi,

I have test the Vegan Vanilla Cupcakes recipe but the turn out was not very good.

Can someone please help me with these:
1. Its too sweet. Is it because I use Soyrich?
2. May I know the cornstarch function? Can I omit it?
3. There lots of lump? I've use mixer but still can't get rid with it. Was it because of the cornstarch?
4. If I'm using margarine can I use the soft margarine such as Vitalite? Any suggestion?
5. The texture is moist but I just don't like the taste. It taste as if u have put extra flour... Ermm, was it how vegan cake should taste or I wrongly measure the ingredients.

I hope someone can help me with this. I'm soo 'mati akal' coz I have an order for it.

Linda, you can omit the cornstarch - it gives a denser texture.
I usually don't use it.

The batter is supposed to be runny and you need to add the flour mixture gradually, in a few batches to avoid lumps.
Because it is runny it indicates a high proportion of liquid to flour so you should not have had that 'floury' aftertaste.
I use manual whisk and not electric one and so far have no issue with lumps. Your 'floury' taste could be due to the lumps, no????

I don't use margarine in mine. I would use canola oil and have been a loyal user of Naturel brand canola oil for years now. It gives a different taste compared to other vegetable oil.

Vitalite I think is just a margarine spread, not a margarine proper. Can someone correct me here? Just like Buttercup not being a proper butter.

Lets wait for the result of the TK next week on this vegan cupcake.

Kak Najat, the 'floury' taste not only happen to lump but whole cake. I've use mixer but the lump is still there.

Perhaps I didn't measure it correctly (I use cup measurement). I'll try to convert it to metric unit. 1cup superfine flour = 110g (I only have superfine flour).

Last night I used Soy milk + Apple vinegar. Do the Soy milk be at room temp? Don't you think that the cupcake was too sweet?

To night will make another attempt & hope the result would be much better. The 1st cake definitely will going to trash as it was too sweet + floury taste.

I'm afraid that I can't wait for next week because the client want to have it by this Saturday. But I'm looking fwd for the result

Linda, try again and do not forget to sieve your flour. The lumps could be because the flour was not distributed evenly or old stock.

I use cup measurement as per the book and my cupcakes are not sweet. I use cartoned soya milk and not the fresh one. Fresh soya milk has sugar in it and it is sweeter than the cartoned ones.
Soya milk at room temperature and let curdle for a few minutes after you add the vinegar.

Try using canola oil instead of margarine or shortening. It does give you a different taste.

Your cupcakes should have glistening tops after baking. This is the effect of the soya buttermilk and oil.

Hi Kak Najat. I've success in making the vegan cupcakes recipe. I even double the recipe to make a cake & cut it into pieces as door gift. The customer seems to love the taste too.

But then, there one thing that I need to know. Is there any different between Vanilla Extract & Vanilla Essence? I had never try using Vanilla Extract before

p/s: I use SoyRich (non added sugar) for this recipe.
