Marble Butter Cake

Made this simple and delicious cake for breakfast today. Hope you will like it too.

p.s. Instead of butter cake, you could also offer this flavour to your customers who like a twist to their normally butter cake Smile .



Marble Butter Cake
Makes 1 loaf of approx. 22 x 12 cm

Ingredients:
175g butter
160g castor sugar
3 eggs, lightly beaten
150g cake flour
1 tsp baking powder
100ml milk
25g cocoa powder, sifted
½ tsp chocolate emulco (optional)


Method:


1. Preheat oven at 180 degC. Line a loaf cake tin with greaseproof paper
2. Sift flour and baking powder into a mixing bowl. Set aside.
3. Combine butter and castor sugar in a mixing bowl. Using paddle of your mixer, cream until light and fluffy. Scrape the bowl periodically for well mixing.
4. Add eggs gradually, beating well after each addition.
5. Pour in milk. Mix well. Fold in flour mixture in (2) and mix until batter is smooth.
6. Divide the mixture into 2. Add cocoa powder and chocolate emulco to one of the portions.
7. Drop large spoonfuls of each of the mixtures alternately into the prepared cake tin. Drag a skewer through the mixture to create a marbled efect.
8. Bake at 180 degC for 40 minutes or until skewer inserted into the centre of cake comes out clean.

Notes:
1. Make sure butter and eggs are at room temperature.
2. Scrape bowl periodically to ensure all ingredients are well mixed.
3. To prevent curdling, mixer must be at low speed when eggs are added.

hi, i tried this Jo's Marble Butter Cake, and ..WOW!! Surprised amazingly delicious!! y i dint come here earlier??? scratch ok, nvm..better late than never>
but Jo, could u pls give me a bigger conversion of this recipe. using 250gm butter or some where around there..i tried doing it by myself, just cant afford for failure now.

Here you go jackie:

Ingredients:
250g butter
228g castor sugar
4 eggs, lightly beaten
214g cake flour
1.5 tsp baking powder
143ml milk
36g cocoa powder, sifted
3/4 tsp chocolate emulco (optional)

If you do not have a digitial scale, just round the amount up or down, i.e. 228g castor sugar to 230g. Good luck. Make sure you use the best butter you can find Wink

What if I substitute the cake flour with normal all purpose.
The weight of flour will differs right?

Just replace cake flour with the same amount of all purpose flour. The difference is, by replacing cke flour with AP flour, the texture of cake will be different since for the same amount, AP flour has got higher % of protein thn cake flour. Not much of a problem with the substitution. Just be careful not to overmix the batter when flour is incorporated.

I have a silly Q here. Pls forgive me. Please teach me how did you add the amount of ingredients. Eg: in your 1st post you stated 175gm butter, then jackie request recipe for 250gm butter. Thank You so much in advance. I need recipe for 500gm butter. I love moist butter cake. Luv, Lovely Tulip

if i wish to make this as a pure butter cake, do i substitute the same amount of cocoa powder with cake flour?
if i use plain flour, is it the same amount too?
