Candy Melts

Hi Jo! I am Lee Hong, still remember me? I've already start my level 3 on past sunday.
My instructor is Yok Mooi and there was around 8 pupils in the class.

I bought a candy mould & a set of candy bowl from ICCA, but so sad, white candy melts out of the store and need to wait until November for the new stock. Do you have any idea for the alternative material to make candy? can i use white chocolate to make candy? appreciate for your time & answer on this, thanks in advance ya.

Yes, you could use the normal white chocolate for the same purpose. Melt as usual in the candy metling bowls in microwave. Take care not to overcook your candies. Good luck!

Jo, I thought you can only use Compound chocolate in replace of Wilton's Candy Melts? Other types of chocolates may need tempering.

Yes, I was referring to white compound/coating chocolate, those that you could get form Bagus or Bake With Yen. Sorry that I didn't stress this. For candy moulding, you want to stick to compound. Thanks.

Ladies,

Sorry hope you dont mind me tumpang this thread. I am just wondering, is the candy melts sold in Wilton hard? I'm thinkin of making my own candy, so just wondering if they are easy to melt?

By the way, when you say compound chocolate from Bake with Yen, are there any specific brands?

Wilton's Candy Melts are not pourable as in runny after they are melted. It really depends what you are going to do with the Candy Melts. CM are good for candy details painting and details of candies, but not runny enough if you want to use them to fill mould canvities as in, pouring.

BWY doesn't label their compound chocolate but the type which they sell is of pouring consistency. At any time, if you need to thin down thick candies, add 2 tsp shortening to 400g candy melts. Add more if required.

this white compound chocolate cost me RM16.50

i've tried to made candy and found that it is quite thick...but the taste is nice Wink

hi..all! The above photo for the white compound chocolate is the one I use in my classes. Its widely available in Singapore. Costs S$6.80/RM 16.20. For the same Tulip Brand for Dark Chocolate, its S$4.80/RM 11.45.

I'll post some photos of chocolates we made during class.

CM not of pouring consistency? But the yearbook gives a different impression with candy plaques and stuff. I actually bought the CM to make the castle plaque as in the 2007 yearbook. Tried melting the CM in small amts over boiling water but it lumped - I thght it could be cuz 1) I kept the CM too long b4 using it. 2) I live in Kluang where it's a hassle even getting piping gel so I had someone buy the CM for me. It had to endure a 3.5 hr journey in a hot booth and by the time I got it it was in lumps.
Is that why it couldn't melt? I had to clump it by hand and stuff it in my alphabet candy mold. Help!
