Choo Choo Train bikkies
Made these bikkies for my lil nephew who celebrated his 2nd birthday a couple of weeks ago. He has a very keen interest in trains and absolutely adores Thomas the Tank. I couldn't master Thomas in time so I did these instead.
These are shortbread decorated with coloured royal icing. The detail requires a steady hand and good lighting over your workbench.
Although the biscuits turned out fine this time, I may use a different biscuit recipe in future - something less "short" so it is less likely to crumble during storage.

Cute! So neat.
Just wish to do a survey on the texture of cookies in cold country. Do cookies take longer to get soft in colder/less humid countries like Australia?

Thanks Jo n Jen!
Jo, I don't find that biscuits go stale as quickly in our dry climate, but they do so eventually. I take the precaution of storing my biscuits in an airtight container as soon as they have cooled if I bake them on a humid day or in a humid kitchen.
I find biscuits with a high % sugar tend to soften quickly but shortbread tend to remain more or less the same.
Hope this helps.
