Lemon Cookies

this is a fondant in pink..then followed by royal icing in yellow.


boxed up and ready to give away!

Ingredients:
180g butter(salted), softened
100g fine sugar
zest from 1 lemon
250g Top flour
1 egg

Method:
1. Cream butter and sugar till light and fluffy. Add egg to beat.
2. Add lemon zest and fold in flour
3. Mix into a soft dough. Leave it in the fridge for 1 hour.
4. Remove from fridge, roll out dough to 3mm thickness.
5. Cut into desired shapes using cookie cutter.
6. Bake in preheated oven 180C for 15 minutes. Remove to cool completely before icing.

Seen above, the cookies are either covered in royal icing or fondant. If you want to use fondant, just spread a thin layer of royal icing on the cookie before putting the fondant. So that the fondant will stick to the cookie.
