Orange Crunch Cookies

A new cookie recipe created for my store. Mainly to encourage people to bake wholesome cookies for their family members. With low sugar, no eggs in mind!!

A hit will many who comes to my store. Some maciks are baking this for Hari Raya. And they are very happy with it. Very good reviews on the cookie.

Enjoy..!



Ingredients
375g Top Flour
100g fine sugar
250g butter(salted)
zest from 2 oranges

Method
1. Leave butter out to melt in room temperature till very soft.
2. Add zest, sugar to stir.
3. Add flour and mix till it forms into a soft dough.
4. Use a cookie scoop to scoop into half moon balls and place on the baking tray.
5. Bake in preheated oven 180C for 10 to 15 mins or when the tops are slightly golden brown.
6. Remove to cool completely before storing in containers.

Notes
Why use Top Flour?
Its the best to use for cookies. It makes the cookies very crunchy.

May I know whether the Top flour is a normal flour or the superfine flour? The recipe is quite easy. Can make for Hari Raya Razz

Top flour is a brand from Prima Flour mills.

In Singapore, its widely available and can be found in supermarkets, convenient shops and of course baking retail shops.

If you use plain flour, you may need to mix with a low gluten flour or the cookie may be too hard.

hmmm i'm not sure exactly what's in cookie flour. but my usual baking ingredients supplier in penang sells cookie flour. he recommends it for crispier cookies. perhaps its the same thing but different name? must go ask him what exactly it is and will report back here! Smile

Over here.. .. it could be the same thing.. they call it SP/low protein flour which they recommend for guaranteed crispy cookies .. just lessen the amt of custard powder. I dunno confused .. practically clueless bout these things.. Hi protein low protein.. low to med... confused scratch

cookie flour is low protein flour I think. high protein flour is for breads and stuff, used to make cookies it produces a chewey texture
