Cheddar Cheese with Buttermilk Muffins

Cheddar Cheese with Buttermilk Muffins
Ok, this is not a cupcake recipe but a muffin. Hope its okay still, to share this delicious muffin recipe here.
Must be eaten when its warm..

Makes 12 muffins
Ingredients:
375g self raising flour
200ml Buttermilk(I used Dairy Farmers brand)
125g Cheddar Cheese(diced)
60g butter(salted, soften in room temperature)
1 egg
80 g brown sugar
Method:
1. In a mixing bowl, add butter and sugar to mix.
2. Add egg and milk to beat/mix together.
3. Add flour to mix till its well mixed.
4. Add diced cheese, stir to mix evenly.
5. Line muffin tray with paper muffin cups.
6. Pour batter mix till 3/4 full.
7. Baked in preheated oven 180C for 20 mins.
Notes:
You can use other types of cheese for this recipe. During the demo, I use Edam Cheese. But I also showed how to diced the cheese or the lazy way, just shred it using a mandolin.

It was done thru a LIVE Baking demo at my store on Sunday, 26 July. Many people 'bought' over the idea of savoury muffins for a change after eating sweet muffins filled with nuts or fruits or chocolate chips.

no ..when its just out of the oven..eat it then and now.
If it has cooled down for several hours..the cheese will turn hard. Warm it by putting it back to 'bake' for 5 mins on 200C heated oven.
The cheese will melt and warms the muffin making it soft and fluffy again.
