Clone: Kenny Rogers Muffins

Anyone interested to try & review this recipe with me? KR has em in Vanilla, Choc & Banana so I want to use this first, then tweak the recipe accordingly to fit all the flavours. I think their muffins are the best I've tasted!

So, anyone interested? For my first attempt I'm going to do vanilla, ie no cornmeal/corn - just cos I got no ingredients!

This recipe is the top secret recipe clone, so I have high hopes!


Kenny Rogers Corn Muffins
1/2 cup butter
2/3 cup sugar
1/4 cup honey
2 eggs
1/2 tsp salt
1 1/2 cup all-purpose flour
3/4 cup cornmeal
1/2 tsp baking powder
1/2 cup milk
3/4 cup frozen corn


Preheat oven to 400 degrees. Cream together butter, sugar, honey, eggs and
salt. Add flour, cornmeal and baking powder and blend thoroughly. Add milk
while mixing. Add corn to mixture and combine by hand till corn is worked in.
Grease a 12-cup muffin pan and fill each cup with batter. Bake for 20-25 min.
or till muffins are brown on top.



Would love to hear from yall! Hope we can get to try it out. Especially tempting after seeing the muffins rise fast forward on KR's ad on TV Very Happy

Oh oh! I have been searching for this recipe for years! Thank you eunice hug I LOVE their muffins. Now have to look for the cornmeal!

Shall we try it? =D I really want to hear what everyone else thinks & how it fares in comparison!!!

If I can get the choc, banana & vanilla to work I shall post it up too. Can't wait to see your experiments!

not sure why..my kids loves the KR muffins too but i can't even eat them. to me, they are horrible!!!
but i'm interested to know how good this recipe is.

Really? Horrible in what sense? I would totally reduce sugar though, that's my only thought!

Yay, nikkita you go girl! Can't wait for your tweaks! I am on erm a healthy eating plan now so I'm avoiding baking myself cos I will surely have one haha. Very Happy

Needa ramp up the self control fluids so that when I do start baking I will only have a bite Wink

All this cos of baking and an uncontrollable urge to eat everything in sight! I wonder if those skinny skinny pastry chefs have a secret.hehe

Very Happy Ehe, no magic pills but the secret is moderation, REAL moderation! Because you can eat anything but just a little bit of it - the portion sizes are very important! It's all about the awareness also I guess, if you know you have a problem (me too!), we gotta work on it! Wink

Me also....gain so much, sometimes cant control. I think we should start a thread on how to keep slim...hahaha.

Thanks for the KR muffins. I use to like their corn muffins but nowadays it is not so nice already. Btw Eunice 1/2 cup butter, how many grams? Me very bad in cup always prefer gram...easy. If we use banana or choc, we replace frozen corn rite and still have the cornmeal rite.

Will try it out later and let you know the outcome. Good idea to try out the recipe and then review with each other.

Nikkita, if not mistaken you can get the cornmeal at Gluten shop in SEA Park, PJ.

hehe yaa that's something I seem to be lacking nowadays; no discipline especially when no one is watching Very Happy but you are right, have to work on it. A moment on the lips is forever on the hips!!!

Hey...If we get enough response we might just start that thread Amy is refering to!


Btw, thank you Amy, I think I'll look for the cornmeal much closer to my house, i.e. in Brunei Very Happy

It's equal to 113g.

You can also get cornmeal from the organic section of Jusco or Cold Storage. Tesco may have it under baking section.
