Healthy Banana Muffins

Its an old recipe I had on my own forum. Sharing here:



Recipe yields 12 muffins.
Ingredients:
5 pcs ripe bananas
1 egg(lightly beaten)
70 g light brown sugar
250 g plain flour
2.5 tsp baking powder
1 tsp bicarbonate of soda
1 tsp ground nutmeg powder
1 tsp salt
1 tsp ground cinnamon powder
50ml Sunflower Cooking Oil

Method:
1. Heat up oven at 190 deg
2. Mash bananas in a large mixing bowl
3. add egg, sugar and oil. Stir to mix.
4. Sift flour, salt, nutmeg, cinnamon powder, baking powder and soda together.
6. add flour mixture to mashed banana mixture.
7. Put paper cups in muffin pan.
8. pour muffin mix into each cup(about 80% full, don't fill to the top)
9. Bake for 25 mins.
10. Leave it to stand in oven for another 10 mins b4 removing from oven to cool completely

This recipe uses less sugar and no butter. the sweetness comes from the ripe bananas.

I had a cupcake class yesterday. We did this recipe again. This time, we didn't mash up the bananas, only cut into slices. Students say more yummy this way as they can bite into the chunks of bananas.
