Mixed Berries Cupcakes
This was created for my Muslim student as she loves Fruit cakes but cannot take liquor soaked ones due to religion.
She told me she baked this for Father's Day and use it on a bigger cake pan instead of cupcake sizes. The family loved it. She said that now this is her top priority cake to do for Hari Raya now.

Mixed Berries Cupcakes
Recipe by Gina Choong
Recipe yields 12 cupcakes
Ingredients
220g butter(unsalted), soften
80g brown sugar
2 eggs
250g Cake flour
100g Mixed dried fruits
juice from 1 orange
zest from 1 orange
Method
1. Soak mixed fruits in juice for 30 mins. Drain and discard juice.
2. Beat soft butter with sugar till its light and creamy. About 10 mins over medium speed.
2. Add eggs one at a time to beat till well combined
3. Add flour to fold in and finally fruits and orange zest.
4. Pour into cupcake liners till 80% full
6. Bake in preheated oven 180C for 15 minutes or when tops are slightly browned.
7. Remove to cool before serving.

If the orange is sour, its the best to use for soaking dried fruits.
Since the juice is discarded, I saved up the zest to make it more flavourful, naturally without essence of any kind.
I added less sugar because the dried fruits are usually sweetened.
My muslim student told me that she tried the recipe again. This time she only use Orange peel(dried)..it was delicious!
I use her idea and made cookies out of it. Will post later.

Oh, tips overload already, Gina!! I am going to have a fine time this weekend. I have a pack of orange peel which I bought weeks ago just sitting in the fridge because I have not figured out what to use them for.

i just did. not sure what to expect really, in terms of texture.
i had thought it would be like a fruitcake texture but mine did not turn out that way.
i baked for 20 minutes and yet it was not brown on top. had to take them out or else would be too dry. flavour wise, it's lovely cos not too sweet.
texture wise, the top, for mine, was very much 'scone' like.
gina..what is the end result i should be looking at?

sorry for replying so late..
its basically a fruit cake recipe which I modified. To omit liquor used in it. So its very 'wet' inside and the tops are browned. a heavy cake good for fondant work. But can be use for buttercream or fresh cream topping too.
