			<description>I made cookies over the weekend, using the Flour Pot recipe.  Most of the cookies came out crispy and yummy, but the bigger and thicker ones were somewhat soft in the middle.  But crisp at the bottom.  I baked at 190 degrees, placing the tray slightly above the middle rack.  I lined the cookie tray with parchment paper - so afraid of burning the bottom of the cookies.



How do I get them to be crisp all over without baking too long and ending up with dark bottoms?

Ingredients

250g butter(salted, SCS)

180g cake flour

100g potato starch

100g Chocolate rice

80g Valrhona cocoa powder

1 egg

150g fine sugar



Method

1. Leave butter in room temperature to soften. Add sugar and beat till creamy.

2. Add egg to beat. 

3. Add all the flour, chocolate rice, cocoa powder to fold in till it forms into a firm dough.

4. Scoop and roll into small balls and place on baking tray.

Am kinda new here and I've been baking and decorating iced cookies for quite some time already.



I normally use the Toba Garrett's Sugar Cookies recipe  (from the book Creative Cookies) and Valerie Peterson's Royal Icing recipe (hmm forgotten what the title of the book is, sigh!).



Anyhow.  I've had no problem whatsoever with my cookies.  They dry well and once dried, I heat seal them in a bag and they should be okay for the next a month in its bag, unopened.

			<description>My little nephew is my source of inspiration. 

Yesterday morning, as I discovered some of Mum's leftover piney jam n pate sucre, he ran into the kitchen to announce: &quot;Piggy on TV!&quot;. 

So here they are - my cutesy pineapple piggies... 

I used about a 3:1 ratio of pastry dough to pineapple jam. I find this gives the best balance of flavour and texture. The details are a little time consuming but I think the results are too adorable not to give this project a go.

I made these for her last year. Showing you what it is:



packed in a box..so pretty. The box costs only S&#36;2.





how each of the cookie look like. Its basically a Caramel butter cookie. And the icing on top is just MMF. With various imprints.











this one had a swirl of royal icing on top of the fondant.
