			<description>I created these for a customer who told me she's hindu vegetarian. I got it all mixed up about eating eggs and made this just for her. Only to find out later, she told me, &quot;We can eat eggs&quot;   



Oh well, the cookies still taste good. In fact, I baked an extra box and left it in the shop. Those who came by to shop tasted it and said its as good as Famous Amos Chocolate Chip cookies.

It was a cookie created for the shop. Basically to show how or what you can use the Jupe concentrated paste for. This was baked 3 weeks ago, customers have all taken the printed recipes. And many loved the taste.



Some of our Indian customers told me this is wonderful for Deepavali. So I decided to share this recipe here.

Ingredients:

180g butter(salted), softened

100g fine sugar

zest from 1 lemon

250g Top flour

1 egg



Method:

1. Cream butter and sugar till light and fluffy. Add egg to beat.

2. Add lemon zest and fold in flour 

3. Mix into a soft dough. Leave it in the fridge for 1 hour. 

4. Remove from fridge, roll out dough to 3mm thickness.
