Chocolate Modeling Paste
For those of you whom I met last Sat (9th Aug 08) at a demonstration, I promised to post the above recipe here. This paste once set can be used to make any flowers but please try to keep your flowers at a cool dry place as the paste is made of chocolate, so you know how well it can stand at hot places ok
Chocolate Modeling Paste
Ingredients:
450g Wilton Candy Melts or any compound chocolate (not couverture)
1/3 cup or 80ml liquid glucose
Method:
1. Melt the chocolate in microwave in 30 sec intervals.
2. Mix the chocolate and glucose. The mixture will start to curdle and come to a loose lump.
3. Take a handful at a time and squeeze over a bowl or sink. The oil will separate and drip ot. Squeeze out as much oil as possible.
4. Wrap in cling wrap and leave to cool and firm up. It is then ready to be used.

I have done this before. But I use dark chocolate bars or white chocolate bars instead. I use baking paper to wrap it up to soak up all the oil. and use it the next day.
I find Wilton's candy melts a bit too sweet.

Wilton's Candy Melts are sweet but the good thing about it is, it comes in many colours. For red rose, you could just use the Red Candy Melts to make into paste and mould super red roses. No colouring required as you know, red is not easy to achieve.

Thanks for posting the recipe on modelling chocolate, Jo. Will I be able to get white chocolate and then colour. What colour do I use? Gel? Or are there special colour for chocolate? I understand cannot use water based food colour for chocolate.

Thanks for sharing the recipe and the video links. I have been searching for this chocolate modeling paste method for quite a while. I have the same question as Mama Min about adding colours to white chocolate melts. Can add gel colours or powder colours?

you need to use oil based coloring for chocolate. (Wilton or Tan See Fong has oil based colors, available from ICCA). I found that Wilton's candy melt white is not white, it is actually cream in color...

I use chocolate modeling paster (or choc plastic) and I LOVE IT! It tastes so nice, and I use honey or syrup with melted choc. (don't bother about the ganache... it's HORRID)
PS. i used powdered food colorings from my local indian sundry shop... it made the clay very dry and horrible

For the plastic chocolate, can try use sugar syrup, glucose and milk couverture, knee it on the marble tarble, and the texture is very good and easy to work with.
