Hi Shah,
Thanks for clearing my doubt. I was suspecting the humidity was doing Tylose or CMC very badly. If it is good hot weather, fondant+CMC work so nicely but when it rains, this paste is worst than even fondant. Sweat like mad!!!
Btw, how much cream of tartar to put in per lets say 500g fondant? And normally what is is the amount of CMC you put into your fondant per 500g? Sorry about all the questions. Thanks in advance ya!!

Just saw the sweating issue about this paste. I tend to disagree. I used this tylose gumpaste with all my cakes, rain or shine, doesn't sweat at all. I especially remembered the tatting theme cake and the zero fighter plane I made, both occasions were raining cats and dogs. I don't work in air-conditioned environment. The fighter plane cake was exposed in the humid open space. Even when the fondant sweats, the figurines didn't. To me, at least, this paste is rather stable.

Method
1) In a mixing bowl, beat egg white with dough hook on high speed.
Apologies if my question sounds silly... what happens if I don't have a dough hook? Any other method?

Re: Tylose Gumpaste Recipe
Guess you could use the paddle attachment to do the initially part. When the paste is getting thicker, remove it to icing sugar duested surface and knead in with hand. Hope it works.

Hi,
Thanks for all your insight on tylose. I am very fond of using marshmallow fondant for my projects as mmf taste good! Can I add tylose to it to make it more gumpastey? Have anyone tried?

Re: Tylose Gumpaste Recipe
Don't see why you can't add tylose or CMC in MMF
