I tried this recipe cause I heard carrot cake is soooo good made me longed to bake this cake, but only to find I'm not a fan of carrot cake. But a neighbor who loves secret recipe carrot cake said this recipe is almost the same. Maybe you can try...but for me I will definitely minus the cinnamon powder. Sorry for the bahasa recipe, I've translated it for my blog.
Cara-cara
- 3 biji telur
- 3/4 cup butter milk
- 3/4 cup minyak jagung
- 1 1/2 cup gula
- 2 tsp vanilla essence
- 1 tsp serbuk kayu manis
- 1/4 tsp garam
- 2 cup tepung
- 2 tsp baking soda
- 2 cup carrot yang di parut
- 1 cup kepingan kelapa (flake coconut) optional
- 1 cup walnut cincang
- 1 tin nanas yang di hancurkan
Cara-cara
- Panaskan oven pada suhu 175 degree. Grease kan loyang pembakar.
- Ayak tepung, garam, bakng soda dan serbuk kayu manis. ketepikan.
- Campurkan telur, buttermilk, minyak, gula dan vanilla, gaul rata. Kemudian campurkan tepung dan gaul sebati.
- Dalam mangkuk lain, campurkan carrot, coconut, walnuts, nenas dan raisin.
Kemudian campurkan kedalam adunan tepung dan gaul hingga rata. - Masukkan dalam loyang dan bakar selama 1 jam.
- Setelah sejuk boleh hias dengan cream cheese frosting.

Try this recepi, is moisture, good and not too sweet!
Carrot Walnut Cake
A)
3 Eggs ( A size)
1/2 tsp salt
180g Sugar
B)
180g Corn oil/Soya oil
1 tsp Vanila
C)
250g Flour
1 tbsp Cinnamon powder
1 1/2 tsp Baking Powder
1 tsp Baking Soda
D)
100g Walnut ( Chopped)
150g Carrot ( Shredded)
1) Whip (A) until fluffy, cream color
2) Add in (B) bit by bit till well blended
3) Sieved (C) , fold in till well combined - low speed
4) follow by (D) and mix till well incorporated - low speed
5) Bake at 180C for 40 - 50 minutes
6) Set aside to cool , add topping and keep in fridge for set.
For Topping
250g Cream cheese
125g Butter
65g Icing sugar ( seived)
1 nos. Lemon zest
1 tsp lemon juice
1) Beat cream cheese till smooth
2) Add in butter continue beat till well blend
3) Add in Sugar, lemon zest , lemon juice till smooth and well blended

What a coincidence, I baked my 1st carrot cake yesterday
It's a simple no fuss recipe and in my opinion, good for making cupcakes too. It's not as densed as those cakes you get from the cake shops but the taste is yummy. I added sultanas soaked in rum and perhaps next time some chopped walnuts.
You might wanna give this a go. *Best part about this recipe, no beater required, semua pakai tangan only

Cupcakeordeath, you actually hit a jackpot when it comes to recipes. Kathryn (4GoodnessCake) is also my Flickr contact and she shares recipes that she has tested in her postings. Try her banana one, it was heavenly with chocolate ganache toppings.
The only thing is you need to spend time browsing her Flickr as some recipes were posted last year.
