Looking for Lemon Lamington recipe
Hi, I have tried the Lemon Lamington at StarBuck yesterday and really liked it, it was so refreshing and lemony taste. It is basically sponge cake coated with lemon curd (guessing only) and tossed with shredded coconuts. How I wish to know how to make this. Does anybody come across this recipe in any cookbook, pls let me know. Thanks.

Try this recipe, you could add lemon rind and juice of half a lemon to this recipe to make it a lemon lamington
Ingredients for the cake:
200g butter
180g granulated sugar
4 eggs, beaten
300g self-raising flour
Icing:
400g icing sugar
2 tbsp cocoa powder
1 tbsp boiling water
1 tsp vanilla essence
220g desiccated coconut ( I use the hawaian coconut flakes -yummy)
Method
Cream the butter and sugar for the cake until light and
fluffy. Add the eggs a little at a time, beating thoroughly after each
addition. When all the eggs have been incorporated add the flour about
50g at a time, stirring gently but thoroughly after each addition. Turn
the batter into a well greased oblong cake tin (about 33 x 22 x 5cm in
size) then smooth the top and transfer to an oven pre-heated to 175°C.
Bake for 30 minutes then decrease the temperature to 160°C and bake for
a further 45 minutes, or until the top is golden brown a When ready, transfer to a
wire rack to cool.
Meanwhile sift the icing sugar into a
bowl. In a separate bowl combine the boiling water, cocoa powder and
vanilla extract. Add this to the sifted icing sugar and beat
thoroughly, until creamy.
Once the cake has cooled cut into about 24 rectangular bars and ice
on each side or hold the cakes with a pair
of tongs and dip them in the icing mix before rolling in the desiccated
coconut.

I've seen lamington recipe in my cookbooks but i wonder what type of cake it is?

Hi, beldandy, lamingtons basically is plain sponge cake cut out into squares and dipped in chocolate icing and rolled with dessicated coconuts, sometimes it is sandwiched with a layer of raspberry/strawberry jam before coated with the choc icing and dessicated coconut. It's very popular in Australia.
However, the one I tried in Starbuck, they have twisted the original recipe and make into lemon lamingtons, which is coated with lemon curd(I guess only, cannot figure out yet)and dessicated coconut, which is very refreshing. In fact, i read somewhere that lamingtons is a good way to use up the stale(maybe one or two day old sponge cake)sponge cake.
