Re: Looking for moist chocolate cake
Hey Jo,
Well after stirring for about an hour....it finally thickened..and it was yummy...i reduced the sugar by a whole lot though =) perhaps should have reduced the water as well, so it wont take as much time to thicken. Overall like everyone has said..the cake is fantastic!

Re: Looking for moist chocolate cake
I, too, tried this recipe successfully. Gone within 5 minutes.
Yesterday, i tried making cupcakes out of this recipe and they turned out gorgeous as well. Still very moist and the texture was quite dense. Baked on low heat ..about 150C.
However the fudge (which was extremely yummy), took ages to thicken and as my water retention is sooooo bad (due in two weeks time) and can't stand up for too long .. I put the whole thing on direct heat and it turned out fine (some traces of lumpiness) ..but for family consumption ...nobody realised anything!!
This recipe is for keeps ...........

Re: Looking for moist chocolate cake
uhmmm...must we cover the pan with foil or can we just use a huge napkin to cover the lid of the steamer? as far as i know, this is the more cheaper way, coz foil isnt cheap =D and it also protects the water falling into the batter...any idea? maybe this is my reason of my failure? thanks!

Re: Looking for moist chocolate cake
Hi Madeline:
In Malaysia, fine sugar = castor sugar
Some sugar mills produce both cator and fine sugar and one has actually told me that fine sugar is supposed to be "finer" then castor -- I really have doubt over this. If we follow the U.S.'s thoery, it should be the other way round.
In U.S. for example, they do not sell coarce sugar like what we get here in Malaysia. Their sugar is fine sugar or granulated sugar. Thier castor sugar is superfine sugar and Icing sugar is confectioner sugar.
Hope this help, Jay
