Looking For Tested FlourLess Cake Recipe

Dear ALL,

I was wondering if anyone in this Forum have tried or been baking FLOURLESS CAKE.

One of my client called me up requesting me to bake this cake for a 3 year old child with Coeliac Disease.

THIS WAS WHAT CLIENT OF MINE SAID TO ME....

" I thought I will do something nice for my niece since she has sufferred so much in what she can eat and cannot eat"!

or if you come accrossed any cake other then jelly cake or chesse cake... please do let me know.....

I have baked flourless cake before but both are chocolate cakes. One is using ground nut (almond or hazelnut) and another one uses alot of eggs. If you want, I can share the recipe.

thank you dear.. can i have the recipe?

i have receive another message from my client informing the below...;
this has to be gluten free as well
We will bring from here (Australia),
the cake tin and cup cake moulds to make gluten free cake and cup cakes.
Will also bring the gluten free cake mix and icing

sorry for asking silly Q... but i realy need to know....
is there special tools to bake & decorate gluten free cake???

I have a book on Vegan, Gluten-Free & Sugar Free Cakes.... If you need some reference, i can help to scan a few recipe & email it to u .... Not so sure if u need any special tools in baking them (not mentioned in the book) ... Do let me know and drop me a PM if you need the recipes ya ...
