Yen Lee: Good Suggestion; pls view the attach "prize" for the BEST answer. Hope we will get some fun answers and might learn a little too at the same time...... Prize is as follow: A chocolate mould for decoration plaque(I think we can use it for fondant too) and a sample tub of Vanilla fondant from Satinice.

Jay, I did some homework & checked out Callebaut's website. Below is the summarized explanation lifted from their homepage.
“Callebaut is one of the rare chocolate makers who select, roast and grind cacao beans into cocoa mass, the prime ingredient for chocolate couvertures. They are roasted in their entire shell to protect the most delicate aromas and yield a more intense, more complex and deeper cocoa flavour. Callebaut grinds all the ingredients extremely fine – much finer than most other chocolate makers. The ingredients are then conched with the same precision and patience until the texture, aroma, taste and flavours blend into perfection. Adding pure cocoa butter and a dash of natural vanilla rounds off the taste and texture of the chocolate”.

Let me take a potshot at the answer...although I was too late to get into your class the other week
Callebaut is like the 'premium' ladies at MCDC lah, kan Jay?? But within Callebaut also got many different classes of chocolate - some are like the sifus on this forum (super premium couverture), some are middle class, and some are like me...decorator wannabe (still real chocolate but not so premium).
As an aside Jay, how do you find the taste of Callebaut compared to Valrhona? (for the same cocoa%) I'm curious because I haven't tasted the Callebaut myself but have heard that it's rather bland...doesn't have the same flavour undertones as Valrhona.

Najat, I thought Jay was looking for an answer that associates Callebaut to Ladies? Your answer was the theory but there was no 'practical' to relate to day to day life, which is 'Ladies' in this case. So your answer should be an analogy - The 'grade' of ladies that is equavalent to Callebaut, just like Chow Kit day-time ladies are associated to BWY no-name compound chocolate. (Oopss, make sure no BWY staff is reading this!)
