Tylose Gumpaste Recipe

I have tried out this gumpaste recipe for the wedding cake I made. I find it easy to make, easy to handle and dries fairly well (1 day). Would like to share it here with you. I quartered the original recipe as my mixer would not be able to handle the entire batch.

Nicholas Lodge's Tylose Gumpaste
Ingredients
1 Egg White
8 Oz. Icing Sugar
4 level Tsp Tylose Powder

Some Crisco Shortening

Method
1) In a mixing bowl, beat egg white with dough hook on high speed.

2) Set aside 1 cup of icing sugar. Using low speed, add remaining icing sugar to the egg white. Turn to highest speed and beat till soft peak.

3) Turn the speed back to low and sprinkle tylose powder over five seconds. Turn the speed up to the high setting for a few seconds. The mixture will became quite thick.

4) Sprinkle the work surface with the reserved icing sugar. Remove the mixture from the bowl onto a work surface. Rub your hands with shortening and knead the paste, adding icing sugar gradually till you get a soft but not sticky dough. Wrap the paste tightly with a plastic bag and keep it in a ziplock bag.

5) Refrigerate for 24 hours.

6) Bring paste to room temperature before use.

Tylose is cheaper than Gum Tragacanth which I find it alluring. Hee~ Very Happy Hope you will find this recipe useful. good luck

what is tylose powder and where to get? Ignorant about it lol Since using egg white, can the flowers last long thanks

Tylose is a brand name of CMC. CMC is the chemical name of this type of man made gum, short for Carboxyl Methyl Cellulose. ICCA carries CMC.

Hi Amy, yes the flowers do keep. CMC (tylose) has anti-bacteria property that discourage bacteria growth.

Hi Jenihmc, I think it is possible. I'm not sure of the exact substition though. Is it 2 tsp of meringue powder to 2 tbsp water for 1 egg substition?

1 egg white = 2 tsp meringue powder + 2 tbsp water

Hi Rei

Thanks for the recipe, just to check does the gumpaste sweat when it is out of the fridge? Can we keep it out after the initial chilling or does it have to remain in the fridge always?

Hi Ashveena, if it is wrapped properly, it doesn't sweat when thawing. The gumpaste can be kept out till you no longer need it. Then, in the fridge it goes again.

I haven't tried making this recipe but looking at the amount of Tylose/CMC as compared to amount of icing sugar, this paste should be stronger.

Hi there ,

The problem with the tylose paste is really sensitive with humidity.kalau hujan habis lembik... But to prevent it I suggest you to add 1/4 tsp of cream of tartar.
